摘要
通过对羟自由基、超氧阴离子、DPPH清除能力和还原力的测定,确定了二氢杨梅素固体脂质颗粒的抗氧化能力;滤纸片法测定了二氢杨梅素固体脂质颗粒对细菌和霉菌抑菌性能.结果表明,二氢杨梅素固体脂质颗粒较二氢杨梅素的DPPH清除作用略高,二氢杨梅素固体脂质颗粒的羟自由基体系清除作用高于二氢杨梅素、Vc的清除作用,当质量质量浓度为0.08 mg/m L时对于超氧阴离子的清除率可达到80.89%,二氢杨梅素固体脂质颗粒与Vc的还原力接近,抑菌试验结果显示,二氢杨梅素固体脂质颗粒对大肠杆菌、枯草芽孢杆菌有明显的抑菌效果,对青霉和黑曲霉抑菌效果不明显,对大肠杆菌及枯草芽孢杆菌的平均抑菌直径分别为14.1 mm和12.4 nm;对大肠杆菌、枯草芽孢杆菌、青霉的最小抑菌质量浓度分别是7.5、15、60 mg/m L,对黑曲霉几乎无抑制作用.
The antioxidant capacity of dihydromyricetinsolid lipid particles was determined through hydroxyl free radical, superoxideanion, DPPH scavenging capacity and reducing power assay. The antibacterial properties of bacteria and molds of dihydromyricetinsolid lipid particles were measured using filter paper method. The optimized conditions were obtained as follows. The scavenging effect of DPPH on dihydromyricetinsolid lipid particles was higher than that of dihydromyricetin. The scavenging effect of hydroxyl radical system of dihydro- myricetinsolid lipid particles was higher than that of Vc and dihydromyricetin. When the con- centration was 0.08 mg/mL, the scavenging rate of superoxide anion could reach 80.89%, and the reduction force of dihydromyricetinsolid lipid particles was close to Vc. The results of antibacterial test showed that dihydromyricetinsolid lipid particles had obvious antibacterial effect on E. coil and Bacillus subtilis, and the average antibacterial diameter of E. coli and Bacillus subtilis was 14. lmm and 12.4 nm. The minimal inhibitory concentrations of E. co- li, Bacillus subtilis and Penicillium were 7.5 mg/mL, 15 mg/mL and 60 mg/mL, respec- tively. It had almost no inhibitory effect on Aspergillus niger.
