摘要
介绍了金枪鱼的营养价值及食用方式.阐述了国内外的解冻方式及其优缺点.应用通电加热技术具有加热速度快、加热均匀、能量利用率高等优点.近几年已被广泛应用于处理液体方面,而在肉制品处理方面还处于应用研究技术水平.通电加热技术在高质量解冻产品方面有很大的潜能.
The nutritional value and edible way of tuna were introduced in this paper. This paper also expounded the thawing method and the advantages and disadvantages of domestic and foreign. Ohmic heating had the characteristics of heating quickly, uniformity and its high energy utilization rate. It was applied in processing liquid widely. However, it was still in technical level of application research. Electric heating technology has great potential in ef- fectively thawing product.
