Study on Properties and Application of Microbial Lipase

脂肪酶是重要的工业酶制剂之一,微生物是其主要来源。脂肪酶广泛应用于医药领域、食品工业、洗涤剂工业以及相关的领域。对脂肪酶的种类以及发酵过程中所涉及的基因工程菌的构建、优化发酵工艺、分离提纯等进行了综述,并结合脂肪酶的分子结构,对脂肪酶的性质和应用方面进行了总结,为今后关于脂肪酶的进一步研究提供了便利。

Lipase is one of the important industrial enzymes. Microorganism is the main source of the lipase. Lipase is widely used in the field of medicine, food industry, washing industry and related areas. Types oflipase and the construction of genetic engineered bacteria, optimization of fermentation, separation and purification involved in fermentation process were reviewed, and properties and application of lipase were summarized based on the molecular structure oflipase, which provides convenience for further study oflipase in the future.
