摘要
以胡萝卜、柑橘为主要原料,采用正交设计,筛选出了复合饮料的最佳配方。结果表明,采用胡萝卜汁∶柑橘汁=1.0∶1.0,4%糖浓度和0.005%柠檬酸,可制成风味独特、色泽鲜艳的保健型复合饮料。
Based on taking carrot and citrus as materials ,the optimum formula of the compound beverage was selected by using orthogonal design. The results showed that carrot juice:orange juice= 1.0:1.0,4% sugar concentration and 0.005% citric acid could produce unique flavor, bright color and health care compound beverage.
