摘要
以大豆分离蛋白为试验原料,利用微波辅助大豆分离蛋白的磷酸化改性,并与传统磷酸化改性方式进行对比,根据BoxBehnken中心组合实验设计原理,确定微波辅助大豆分离蛋白磷酸化改性的最佳反应条件为:大豆分离蛋白浓度7%、三聚磷酸钠添加量为6%、微波时间为4min时能得到较高的乳化活性,经微波辅助大豆分离蛋白改性的乳化活性由0.45提高到0.718。
With soybean protein isolated as experimental materials, use the microwave-assisted phosphorylate modification , and contrast with the microwave-assisted phosphorylate modification. The optimum reaction conditions of emulsibility was determined based on the principle of Box-Behnken design: SPI concentration was 7%, STP volume of addition was 8% , microwave time was 4 min.With the microwave-assisted emulsibility from 0.45 to 0.718.
