摘要
研究不同反应时间、温度、p H值和明胶浓度对明胶与甲醛反应的影响,结果表明,在30℃、p H8.0、明胶浓度0.8%时,反应活性较好,延长反应时间有利于明胶与甲醛的反应。优化了胰酶水解明胶及其捕获甲醛的最佳条件,表明加酶量、底物浓度、水解时间对反应影响显著,确定了甲醛捕获率与氨基氮含量呈正相关性。红外光谱分析得出水解后图谱的吸收峰明显增多了,氨基N-H伸缩振动的吸收峰和羧酸盐羧基C=O伸缩振动吸收峰明显增强,表明胰酶水解明胶的反应发生了,且水解明胶的游离羧基和氨基明显增加。
Reaction of gelatin with formaldehyde was studied at different reaction time,temperature,p H value and gelatin concentration. The results showed that the activity of formaldehyde capture properties were higher at the condition of 30 ℃,p H value of 8.0,concentration of 0.8 %. The action of tyrisin enzyme hydrolysis was the best through the deep hydrolyzed of gelatin. The optimum conditions of gelatin hydrolysis by tyrisin and formaldehyde capture rate were optimized. The results showed that quantity of enzyme,substrate concentration,hydrolysis time had a remarkable influence on the reaction and it was a positive correlation between the formaldehyde capture rate and amino nitrogen content.
