摘要
主要研究大球盖菇的护色保鲜技术,通过不同保鲜剂对呼吸强度、失质量率、褐变度、丙二醇的影响,确定了大球盖菇护色保鲜的最佳保鲜剂。结果表明,100倍的EM菌稀释液与0.3%焦亚硫酸钠溶液均对大球盖菇保鲜护色有一定的作用,能有效抑制大球盖菇菌褶的褐变,降低失质量率,并抑制大球盖菇的呼吸作用。
The research study on color-protection and fresh-keeping technology of Stropharia, based on the effect of onrespi- ration, weightlessness rate, browning degree, and propanediol. The results show that using concentration diluted 100 times of the EM bacteria and 0.3% sodium metabisulfite solution has effect to color-protection and fresh-keeping of Stropharia. It can effective reduction of weightlessness rate, browning degree of Stropharia, and inhibition effects of respiration of Stropharia.
