摘要
随着汞的广泛使用,其对环境的污染越来越严重,通过食物链进行循环富集作用,对人类健康构成威胁。文章简述汞在不同形态下对动物和人的危害机理,分析重金属汞的污染来源和残留情况,分析目前国内外对动物性食品的重金属汞限量标准,并对汞的检测现状和发展趋势进行展望分析。
The pollution of mercury is becoming more and more serious to the environment clue to the widely use of mercury. The circulating enrichment of mercury results in excessive animal food residues through the food chain, which is a threat to human health. The article described the update about the damage mechanism of mercury in different forms to human and animal, pollution sources, residue of Hg , the current mercury limited standards of animal derived food home and abroad, and detection of mercury.
