不同包装材料对大米恒温恒湿贮藏品质的影响 被引量:7

Different packaging materials on the rice quality during constant temperature and humidity storage

摘要 分别采用聚偏二氯乙烯(PVDC)和聚乙烯/尼龙/聚丙烯(PE/PP/PA)包装材料对大米进行包装,在恒温恒湿(温度37℃,湿度70%)贮藏条件下,研究不同包装材料对大米贮藏品质的影响。试验结果表明,这两种包装材料的大米水分均有所降低,蒸煮品质下降,淀粉酶活力和脂肪酶活力呈先升高后降低的趋势,脂肪酸值升高;PVDC包装材料组各项指标变化程度均低于PE/PP/PA包装材料组。在恒温恒湿贮藏条件下,PVDC包装材料能更好地延长大米保质期。 Using PVDC and PE/nylon/polypropylene packaging materials for packaging of rice in the constant temperature and humidity(37℃,humidity 70%),we studied the effects of different packaging materials on storage quality of rice.The results showed that:rice moisture content by the two kinds of packaging materials were both reduced,and cooking quality were lower,amylase and lipase activity decreased after rising first,fatty acid value increased;change degree of PVDC material packaging group were lower than that of polyethylene/nylon/polypropylene packaging materials.In the constant temperature and humidity storage conditions,PVDC packaging materials could better prolong the shelf life in rice.
