摘要
选取海藻酸钠为壁材,肉桂醛为芯材,通过单因素试验考察了喷雾冷凝法制备微胶囊工艺中海藻酸钠肉桂醛乳化混合溶液黏度、固化时间、氯化钙溶液浓度及芯壁比对微胶囊包埋率的影响,然后对肉桂醛微胶囊的粒径分布和表面结构进行表征,并研究了所制微胶囊在空气中的释放速度及在卷烟中的加香效果。结果表明:当海藻酸钠肉桂醛乳化混合溶液黏度为1.2 Pa·s,固化时间为20 min,氯化钙溶液质量分数为2%,芯壁质量比为0.5:1时微胶囊的包埋率可达67%;微胶囊粒径在52.3~1 408.0μm范围分布,64.45%的微胶囊集中在352.0~1 408.0μm粒径范围之内;电子扫描显微镜可以观察到微胶囊表面呈多孔状;肉桂醛微胶囊在空气中有平稳的释放性;微胶囊加入到卷烟中可促进烟气醇和,刺激性减弱。
In this study, sodium alginate was selected as wall material and cinnamaldehyde as core material, the microcapsules preparation process was optimized by spray condensation method. The effect of the viscosity of emulsion of sodium alginate and cinnamaldehyde mixture, curing time, concentration of calcium chloride solution, and the mass ratio of core/wall on the embedding rate of microcapsule were investigated by single factor experiment. Then the size distribution and surface structure of microcapsules were characterized, and release speed of microcapsules in air and the effect in cigarette flavoring were investigated. The results showed that when the viscosity of the emulsion was 1.2 Pa·s, the curing time was 20 min, the mass fraction of calcium chloride was 2%, the mass ratio of the core/wall was 0.5/1, the embedding rate of microcapsules could reach to 67%.The size distribution of microcapsules was in the range of 52.3 to 1 408.0 μm, and 64.45% of the microcapsules focused in the range of 352.0 to 1 408.0 μm. The surface of microcapsules was observed by scanning electron microscope. The release property of microcapsules in the air was stable and when the microcapsules were applied in cigarette, they could improve the taste of smoke smoothly and decrease the irritation.
