摘要
β-胡萝卜素是一种重要的香味前驱体,其化学性质不稳定,易在光、热、氧等条件下降解产生一系列香味物质,对于提升烟草品质具有重要作用。本研究直接在高温下对胡萝卜进行干馏制得胡萝卜素衍生物,通过GC-MS对其进行挥发性组分分析,同时采用热裂解仪对其进行高温有氧裂解以模拟卷烟抽吸过程,并将其用于卷烟加香中。结果表明,β-胡萝卜素衍生物及其有氧裂解产物中含有大量的二氢猕猴桃内酯、β-紫罗兰酮等香味成分;在卷烟中应用可以增加卷烟香气,改善余味,降低烟气刺激感。
β-Carotene is the precursor of tobacco flavor components and plays an important role in improving tobacco quality. The chemical property of β-carotene is not stable, in the condition of light, heat and oxygen, it may degrade into a series of flavor components. Here, the dry distillation method was accepted to produce carotene derivatives from carrot. Then, the derivatives were qualitative analyzed by gas chromatograph-mass spectrometer(GC-MS). Also, they were conducted with aerobic pyrolysis to imitate smoking and applied in cigarette to finish flavoring evaluation. The results showed that the derivatives and the products of pyrolysis included a large amount of volatile aroma components, such as dihydroactinidiolide and β-inone. They could enhance the tobacco flavor, improve the after taste and reduce the irritation of smoking.
