摘要
以中原地区12种常见蔬菜为原料,采用紫外分光光度法对蔬菜维生素(VC)含量进行了测定。结果表明,p H=6时,维生素C最大吸收波长为265 nm,标准曲线方程A=0.048 61C-0.000 96,R2为0.998 8。12种中原蔬菜VC含量范围为0.063 5~2.718 7 mg/g,其含量高低顺序为芫荽>青椒>菠菜>生菜>上海青>葱>白菜>长梗白菜>白萝卜>胡萝卜>芹菜>油麦菜。其中,芫荽VC含量最高,为2.718 7 mg/g;其次是青椒和菠菜,分别为2.101 7 mg/g和1.820 4 mg/g;油麦菜VC含量最少,仅为0.063 5 mg/g。芫荽、青椒、菠菜等蔬菜由于VC含量较高,有望成为VC补充的重要食源及VC功能产品研发的重要原料。
The VC content of 12 kinds of winter vegetables from the central plains region was determined by ultraviolet spectrophotometry method. The results showed that the maximum absorption wavelength was 265 nm when pH=6. Standard curve equation was A=0.04861C-0.00096,R2=0.9988. The content of VC in vegetables was from 0.0635 mg∕g to 2.7187 mg∕g. The content order was Coriandrum sativum L.〉Capsicum annuum〉Spinacia oleracea L.〉Lactuca sativa〉Brassica chinensis L.〉Al-lium fistulosum L. 〉Brassica pekinensis Rupr〉Brassica rapa chinensis〉Raphanus sativus L.〉Daucus carota〉Apium graveoleus L. var. dulce DC.〉Lactuea sative var longifoliaf Lam. The content of VC in Coriandrum sativum L. was much higher than other vegetables,up to 2.7187 mg∕g;Secondly,Capsicum annuum and Spinacia oleracea L. wasrespectively 2.1017 mg∕g and 1.8204 mg∕g;VC content in Lactuea sative var longifoliaf Lam. was the lowest,only 0.0635 mg∕g;Coriandrum sativum L,Capsicum annu-um and Spinacia oleracea L. with high VC content were expected to become important food sources for VC supplement, and research and development of VC function product.
