兔眼蓝莓园蓝和芭尔德温酿造红酒的理化指标检测与品质分析 被引量:1

摘要 蓝莓园蓝和芭尔德温是贵州引进的兔眼蓝莓品种,对二者鲜果进行理化指标分析。结果表明,园蓝的糖酸比和花青素含量高于芭尔德温,果实品质园蓝优于芭尔德温;对二者酿造的红酒进行理化指标和品评得出,园蓝和芭尔德温酿造红酒的品质均较好,园蓝更优于芭尔德温,二者都适合作为红酒酿造原料。 Garden blue and Baldwin Rabbiteye blueberry were the alien varieties,the physical and chemical indexes of the fresh fruits were analyzed. The results showed that the sugar-acid ratio was higher in gardenblue than baldwin and the con-tent of anthocyanins was more in gardenblue than baldwin, so the quality of gardenblue was better. The quality of gardenblue blueberry wine and Baldwin blueberry wine were good, and gardenblue blueberry wine was better,so they were both of wine blueberry variety.
