纸葡萄穗霉降解β-胡萝卜素的产香研究 被引量:1

摘要 从采自云南昆明的22份不同陈化时间的烟草样品中筛选到6株可降解β-胡萝卜素的真菌。菌株YNCA9037可降解β-胡萝卜素,获得具甜木香味的发酵产物,经菌落形态、显微形态及转录间隔区(ITS)序列分析进行菌株分类鉴定,菌株YNCA9037初步鉴定为纸葡萄穗霉(Stachybotrys chartarum)。对菌株YNCA9037降解β-胡萝卜素的产香条件进行初步研究,其较佳产香的条件为:pH 6.5,发酵温度28℃,发酵时间72 h,β-胡萝卜素添加量0.2%。菌株YNCA9037降解β-胡萝卜素的发酵产物经气质联用(GC-MS)法分析,检测到致香物质β-环柠檬醛和β-紫罗兰酮。 Six fungal strains which could degrade [3-carotene were isolated and screened from 22 tobacco samples with different aging time from Kun- ming in Yunnan. Strain YNCA9037 could degrade B-carotene to obtain fermentation products with the sweet smell, and it was preliminarily identified as Stachybotrys chartarum by colonial morphology, micromorphology and ITS sequence analysis. The aroma-producing conditions of β-carotene degraded by S.chartarum were preliminary studied. The results showed that the optimum aroma-producing conditions were pH 6.5, fermentation temperature 28 ℃, time 72 h and B-carotene addition 0.2%. The fermentation products of B-carotene degraded by S. chartarumm were analyzed by GC-MS, and the aroma compounds β-cyclocitral and β-ionone were detected.
