摘要
[目的]研究不同培养代料对黑木耳中3种抗氧化物质含量的影响,比较3个品种总酚、总黄酮及黑色素含量的差异。[方法]测定样品的总酚、总黄酮和粗黑色素等抗氧化物质含量,测定方法分别为福林酚法、比色法及黑色素碱提法。[结果]相比传统椴木代料培养,混合木屑代料种植3种黑木耳的总黄酮含量有显著的增加,粗黑色素的产量有所减少,而对黑木耳中的总酚含量影响不大。[结论]椴木、桦木、柞木等杂木屑培养代料较传统椴木代料培养在保持对黑木耳中总酚、粗黑色素产量影响相同的条件下,可获得更多含量的总黄酮。
[Objective]To study the effects of different culture media on the contents of 3 kinds of antioxidants in Auricularia auricula,and compare the content of total phenolics, total flavonoids and melanin in the 3 varieties.[Method] The content of total phenolic antioxidants, determination of total flavonoids and the crude melanin, determination method were Folin phenol, colorimetry and alkali extraction of melanin.[Resuhs] Compared with the traditional material basswood culture,significantly increased the content of total flavonoids of mixed sawdust substitute planting 3 kinds of A uric ularia auricula, crude melanin production decreased, but little effect on the total phenolic content of black fungus.[Conclusion] Basswood, birch, oak and other wood sawdust cultivation material than the traditional culture while maintaining the basswood material total phenolic ,A uricularia auricula crude melanin yield under the same conditions, it can get more content of total flavonoids.
