摘要
在中高职中餐实训教学中发现一些问题,比如:教学工作脱节,岗位的不满意对学生影响很大,管理跟踪难度比较大,针对这一系列问题提出了探讨解决方案。把酒店的专业化引入到课堂中,实行现场真实化技能操作。改善教学设置模式,在教学内容和课程设置上做相应的调节,提高学生的职业道德和专业技能,培养学生的学习兴趣,注重学生的素质教育。
There are some problems in the practice training of Chinese cuisine cooking in vocational colleges. For example,the disagreement of teaching and dissatisfaction of posts have great influence on students,which causes the difficulty of management,and the countermeasures aiming at the problems were discussed. The real practical skill is implemented by introducing specialization of hotels into the classroom. Efforts should be made on improving the teaching mode,adjusting on teaching content and curriculum settings,improving students’ professional ethics and professional skills,cultivating students’ interest in learning and focusing on quality-oriented education.
