应用二维相关荧光光谱检测红酒中胭脂红色素 被引量:3

Detection Ponceau 4R in Red Wine Based on Two-dimensional Correlation Fluorescence Spectroscopy

摘要 将二维相关荧光光谱技术应用于红酒中违规添加合成色素的鉴别,研究了胭脂红纯品溶液、红酒和添加胭脂红的红酒的一维荧光光谱特性。以红酒中添加胭脂红色素浓度为外扰,配置不同浓度(0.1~10μg/mL)胭脂红色素的红酒样品18个,获得其一维荧光光谱,并构造浓度外扰下的二维相关荧光谱,根据同步和异步谱交叉峰的正负和有无,实现了对红酒中添加的外源胭脂红色素特征峰的确认。继而运用主成分回归分析法建立定量分析红酒中胭脂红色素的模型,对预测集样品的预测相关系数为0.994。初步研究结果表明,应用二维相关荧光光谱结合主成分回归方法可以实现葡萄酒中外源合成色素的定性定量检测,具有潜在的应用价值。 The two-dimensional fluorescence correlation specixoscopy was applied to identify the synthetic pigments in red wine. One dimensional fluorescence spectra of pure Ponceau 4R solution, red wine and red wine with Ponceau 4R was analyzed. Adding the Ponceau 4R concentration in red wine as a disturbance, 18 red wine samples adulterated with different Concentration of Ponceau 4R (0.1-10 ~tg.,inL) were prepared and one-dimensional fluorescence spectra of all samples was collected. The 2D correlation fluorescence spectra of the external perturbation was also constructed. Characteristic peak of Ponceau 4R was verified in terms of the existence or inexistence of corss peaks in synchronous and asynchronous 2D correlation fluorescence spectra. The quantitative analysis model was constructed to determine content of Ponceau 4R in red wine using principal components regression, which was used for unknown samples and the correlation coefficient of unknown samples was 0.994. Preliminary results indicated that two-dimensional correlation fluorescence spectroscopy combined with principal component regression method could be implemented qualitative and quantitative detection of synthetic pigment in wine, and it was with a wide range of potential applications.
