摘要
基于傅里叶变换中红外光谱技术(FTIR),结合改进型偏最小二乘回归法(MPLS),建立豆奶中的快速预测方法。结果表明选取有效波段,不使用散射校正,使用导数和平滑校正光谱基线漂移后定标效果最好,各指标的预测值与实测值相关性良好,脂肪(Fat)、蛋白质(Protein)、蔗糖(Sucrose)和总糖(Total Sugar)预测标准偏差(SEP)分别为0.061、0.039、0.039、0.047;预测相关系数(RSQ)分别为:0.98、0.99、0.99、0.99。该方法可应用于豆奶中脂肪(Fat)、蛋白(Protein)、蔗糖(Sucrose)和总糖(Total Sugar)含量的快速分析检测。
Using Fourier Transform Infrared Spectroscopy(FTIR) combined with the modify partial least square (MPLS) al- gorithm to establish a rapid detection method of compositions of soy milk. The calibration models had a best linear correla- tion by select effective wavelength, without scatter correction, derivative and smooth to eliminate baseline wander. The root mean square error of prediction (RMSEP) of Fat, Protein, Sucrose and Total Sugar were 0.12, 0.039, 0.039, 0.047 ; The de- termination coefficient (RSQ) were 0.94,0.99,0.99,0.99.The method can be used to rapid detect Fat, Protein, Sucrose and Total Sugar content of soy milk.
