摘要
以普通市售油料作物黄豆、黑芝麻和花生为供试材,通过"碱溶酸沉"法提取其籽粒中蛋白质,用SDS-PAGE方法分析蛋白质11S和7S组分的相对含量.结果表明,三种油料作物籽粒提取蛋白质组分相对含量存在极显著差异,其中,以大豆的11S组分含量最高为56.87%,芝麻的最低为32.32%,7S组分含量以大豆的最高为28.87%,芝麻的最低为21.53%,11S/7S的比值以大豆最高为1.93,芝麻的最低为1.50.
The relative content of protein components extracted from ordinary commercial three oil crop seeds,including soybean, black sesame and peanut, was studied with alkali extraction and acid precipitation method toextract protein by SDS- PAGE analysis. The results showed that there was significant difference with proteinrelative content among the three kinds of materials. 11 S relative content was the highest in soybean with56. 87% ,the lowest in black sesame with 32.32%. 7S relative content was the highest in soybean with28.87% ,the lowest in black sesame with 21.53%. 11S/7S was 1.93 in soyb'ean,1.50 in black sesame.
