摘要
食品化学是食品科学的三大基础课程之一,从食品化学课程的教学内容,教学方法、课程考核等方面,探讨课程的教学改革方法。初步构建基于PBL与CBT教学法相结合的新的课堂教学方法,培养学生发现问题解决问题的能力,在解决问题的同时,使学生掌握食品化学的各种知识。
Food chemistry is one of the three major basic course in food science. This paper, in terms of teaching contents, teaching methods, curriculum evaluation etc., discusses teaching reform methods from which a new teaching method in class is preliminarily built based on integrating PBL with CBT. This teaching method can train students' abilities in finding and fixing up problems and can make them master all the knowledge about food chemistry while solving problems.
