摘要
油脂是组成人类膳食结构的主要成分,也是食品工业生产中应用最广泛的原材料之一。亚麻籽含有许多对人体健康有益的物质,如α-亚麻酸、木酚素、亚麻籽胶等。同时,亚麻籽油中不饱和脂肪酸占到主要脂肪酸组成的91%,具有预防和治疗疾病的良好效果。针对亚麻籽油在食品工业、畜禽饲料、医药保健品、化妆品等领域的应用前景,阐述亚麻籽油在贮藏过程中形成苦味的原因及其解决方法,并探讨亚麻籽油去除苦味后的营养价值及应用前景。
Oils are the main components of human diet, it is also one of the most widely used raw materials in food industry. There are many substances in flaxseed, such as alpha linolenic a c id, lignans,flaxseed gum are beneficial to the health of human body material. At the same t ime, unsaturated fatty acids accounted for 91% of the major fatty acids in flaxseed oil which has good effect for prevention and treatment of diseases. It discusses the application prospect of flaxseed oil in food industry, livestock and poultry feed, medicine and health care products, cosmetics and other fields. The causes and solutions of bitter taste of flaxseed oil during storage are described, the nutritional value and application prospect of no bitterness flaxseed oil are also discussed.
