摘要
目的探讨PDCA管理方法在医院食堂食品卫生安全管理中的作用。方法以JCI评审标准中有关食品安全条款为主,以医院6个外包食堂为研究对象,针对评审前医院食堂管理存在的食品安全问题,对照评审标准,应用PDCA管理工具,对食堂管理中存在的问题进行持续改进,并评价改进效果。结果改进后各食堂冰箱管理合格率、餐具消毒过程管理合格率、食材管理合格率均高于改进前,差异有统计学意义(P<0.05);改进前后烹饪用水卫生学监测结果比较差异无统计学意义(P>0.05),消毒后餐具卫生学监测均合格。结论 PDCA管理工具的应用能有效提高食品安全管理质量,保障就餐者的用餐安全。
Objective To explore the application of PDCA management method in food safety management of hospital canteens. Methods Based on the food safety assessment standards of JCI accreditation standards, we took 6 outsourcing canteens in the hospital as the research object. Compared the problem of food safety before accreditation with the JCI accreditation standards, then we applied PDCA management tools to improve the problems in the canteen management, and evaluated the improvements. Results After the improvement, qualified rate of refrigerator, disinfection process of tableware and food management were higher than before （P 〈 0.05）, the difference was statistically significant; the difference was not statistically significant in the hygiene monitoring result of culinary water before and after improvement （P 〉 0.05）. The hygiene monitoring result of tableware was qualified after disinfection. Conclusion The application of PDCA management tools can effectively improve the quality of food safety management and ensure the safety of diners.
