不同育龄大鲵肌肉和皮肤营养成分测定研究 被引量:4

摘要 本研究分别提取3育龄、6育龄仿生态养殖大鲵的肌肉和皮肤,测定其营养成分、氨基酸含量及矿物质元素含量。结果表明,仿生态养殖大鲵营养丰富。大鲵皮肤平均粗蛋白含量高于肌肉3.3%,6育龄大鲵肌肉粗蛋白含量高于3育龄2.8%;仿生态养殖大鲵肌肉的平均EAA/TAA为41.61%,平均EAA/NEAA为71.31%,达到理想模式,且6育龄大鲵蛋白质优于3育龄大鲵;6育龄大鲵肌肉矿物质含量较3育龄大鲵高3.71%。由此看出,仿生态养殖大鲵具有重要的市场价值,6育龄大鲵肌肉营养丰富,口味鲜美,更适合进行深加工,应对其进行重点开发和利用。 In this study,muscles and skin of 3 and 6 childbearing age giant salamander of the bionic cultivation were respectively extracted,its nutritional components, amino acids and mineral elements content were measured.The results showed that the giant salamonder with bionic cultivation has rich nutrition. Salamanders skin average crude protein content was higher than the muscle of 3.3% ,6 childbearing age salamander muscle crude protein content was higher than 3 childbearing age of 2.8% ;average EAA/TAA of bionic cultivation salamander muscle was 41.61% ,the average EAA/NEAA was 71.31%, achieve ideal mode, and protein of 6 childbearing age was better than that of 3 of childbearing age ; muscle mineral content in 6 childbearing age was higher than 3 childbearing age of 3.71%.From that,the bionic cultivation giant salamander has great value to market,6 childbearing age salamander muscle has rich nutrition,taste delicious,which is more suitable for deep processing,should dealing with the key development and utilization.
