摘要
以黄豆和芸豆为主要研究对象,分别通过研究单株乳酸菌和双珠乳杆菌组合为发酵剂,对豆类进行全粒发酵。通过测定单菌株产酸曲线及双菌株产酸量,确定菌株的最佳种间比及促生长物质。研究结果表明两株乳酸菌混合发酵效果优于单株乳酸菌发酵效果;种间比:V(La):V(Lp)=2:1的产酸最快,酸度最高,为最佳种间比;大米糖化液中含有丰富的可发酵糖,B族维生素等促生长物质,对本试验所用菌株促进生长作用明显。
In this experiment, soybeans and kidney beans were used as the main research object. The whole grains were fermented by studying the combination of lactic acid bacteria and Lactobacillus boletus.The optimum interspecies ratio and growth promoting substance of the strain were determined by measuring the acid production curve of the single strain and the acid production of the double strain.The growth of the strain used in this exper- iment was significant. Rice saccharification solution is rich in fermentable sugar, B vitamins and other growth- promoting substances.
