保健杏仁茶的研制

摘要 以甜杏仁粉与大米粉为原料,研制一款保健杏仁茶。选取杏仁焙烤时间,大米焙烤时间,甜杏仁粉、超细糖粉添加量4个因素进行单因素实验,正交实验进行工艺优化。结果表明保健杏仁茶最佳工艺为:脱皮杏仁入烤箱130℃烤15 min,大米130℃烤5 min,甜杏仁粉添加量18%,超细糖粉添加量20%,所制产品,口感纯香,品质优良。 A kind of healt Yh products, almond tea, was developed with sweet almond flour and rice flour. Four factors which includes baking time of almond and rice, percents of sweet almond flour and ultrafine powdered sugar are researched by single factor experiment. Processing technology is optimized by orthogonal experiment. The results showed that the best processing technology is : At130 ℃, the time of almond baked in the oven is 15 min, but rice is 5 min. Adding amount of sweet almond flour is 18%, ultrafine powdered sugar is 20%, the products has a good quality and the taste is fragrant.
