生鲜乳质量安全风险评估技术研究进展

摘要 乳制品安全广受人们的关注,而生鲜乳是生产乳制品的原料,其质量安全是保证乳制品安全的基础。风险评估技术是评价安全风险的系统工具,在评估食品安全方面得到了越来越多的发展和应用。本文就国内外对生鲜乳风险评估技术的研究进行了综述,重点介绍了化学危害物与生物危害物的暴露评估研究方法和研究进展,希望对我国生鲜乳质量安全风险的分析、预警研究有所帮助。 The safety of dairy products are widely attention of people, and the raw milk is the raw material for the production of dairy products, the quality safety of which is basis for ensuring the safety of dairy products. Risk assessment techniques is to evaluate security risk of system tools, which is more and more development and application on assessing food safety. Domestic and foreign risk assessment researches of raw milk were comprehensively reviewed, focusing on the method and advance in research of the exposure assessment of chemical and biological hazards, which is hoping to help the analysis of quality safety and warning research in raw milk.
