德阳晒红烟化学成分与感官评吸质量的典型相关分析 被引量:4

摘要 [目的]研究德阳晒红烟化学成分与感官评吸质量的关系,探寻提升德阳晒红烟叶品质的切入点。[方法]以德阳传统晒红烟烟叶样本为材料,通过对烟叶化学成分的测定和感官评吸质量的量化评定,应用典型相关分析方法分析了化学成分和感官评吸质量的典型相关性。[结果]在一定范围内,随着钾含量的提高,烟叶感官评吸质量中的杂气、刺激性、燃烧性的得分呈现升高的趋势;随着总氮和氯含量的降低,感官评吸质量中香气质、香气量和余味的得分呈现增加的趋势;随着氮碱比和钾氯比比值的增大,感官评吸质量中的杂气、刺激性、燃烧性的得分呈现升高的趋势。[结论]增加烟叶中钾的含量,降低烟叶中总植物碱、总氮及氯含量可以减小烟叶杂气和刺激性,改善烟叶燃烧性,提高烟叶的香气质、香气量。 [ Objective] To study the relationship between chemical components and smoking quality of red sun-cured tobacco in Deyang, find the method to improve tobacco quality. [ Method ] With traditional red sun-cured tobacco in Deyang as material, through determination of chemical components in tobacco leaves and quantitative evaluation of sensory evaluation quality, canonical correlation analysis method was used to analyze the relationship between chemical components and smoking quality. [ Result] The results indicated that the scores of mixed gas, excitant and combustibility increased with the increase of potassium ; the scores of aroma quality, aroma quantity and aftertaste increased with the fell of total nitrogen and chlorine ; the scores of mixed gas, excitant and combustibility increased with the increase of TN/Nic and K/ Cl. [ Conclusion ] Increasing the content of potassium, reducing nicotine, total nitrogen and chlorine in tobacco leaves could reduce miscellaneous gas and irritancy, improve combustibility, aroma quality and quantity.
