摘要
以凌枣为试材,探究TPA单独或与其它指标相结合用于判定凌枣贮藏时间的可行性。对0℃贮藏过程中凌枣TPA测试结果采用主成分分析法,构建凌枣贮藏期间质地综合评价模型;将贮藏期间凌枣TPA测试结果与可滴定酸、可溶性固形物等品质指标组合在一起做主成分分析,构建凌枣贮藏期间总体品质的综合评价模型。相关分析结果显示:凌枣质地综合得分与贮藏时间两变量之间的Pearson相关系数为-0.791(P<0.05),Spearman相关系数为-0.683(P<0.05);凌枣总体品质综合得分与贮藏时间的Pearson以及Spearman相关系数则分别为-0.802(P<0.01)和-0.683(P<0.05)。两模型得分与凌枣贮藏时间之间符合线性相关规律。比较两模型,凌枣总体品质的综合评价模型得分与贮藏时间之间的线性相关性更强,对凌枣贮藏时间的推断将更为准确。综合考虑推断的准确度以及实际可操作性,将TPA单独应用于凌枣贮藏时间判定更为适宜。
The feasibility of using Lingzao (Zizyphus jujube Mill, cv. Lingzao) TPA test data alone or combined with other quality parameters for the detection of its storage time was investigated. Texture comprehensive evaluation model of Lingzao during storage at 0 ℃ was established by principle component analysis method using the TPA test data alone, while Lingzao overall quality evaluation model established using its TPA parameters as well as other quality indexes such as titratable acid, total soluble solids etc. Pearson's and Spearman's correlation coefficients calc, ulated through Pearson and Spearman correlation analysis on the variables of Lingzao texture score and storage time were -0.791 (P〈0.05) and -0.683 (P〈0.05), respectively, and those for the correlation between Lingzao overall quality score and storage time were -0.802 (P〈0.01) and -0.683 (P〈0.05). Linear correlation was more appropriate to reflect either the correlation between Lingzao texture score and storage time or that between Lingzao overall quality score and storage time. Compared with Lingzao texture score, the overall quality score had a stronger linear correlation with its slorage time which made it more capable in the speculation of Lingzao storage duration. However, using TPA alone for the determination of Lingzao storage time is more practical when considerring the optional details.
