职业院校烹饪专业师徒制教学模式研究 被引量:1

摘要 社会的发展对烹饪专业的人才要求越来越高,如何培养出符合社会需求,达到人们饮食心理标准,满足人们对健康、色泽、味道、口感等追求的高级烹饪人才,是职业院校特色专业教育的重要问题。本文从师徒制教学模式出发,简要论述了师徒制教学模式,分析了当前社会背景下服务业对烹饪专业人才的需求,说明了职业院校开展师徒制教学模式对烹饪专业进行人才培养的优势所在,提出职业院校烹饪专业实施师徒制教学模式的有效策略,从而为师徒制教学模式改革提供一定的帮助作用。 Since social developments press higher demands to the culinary professionals, it's an important issue for vocational schools to study on how to cultivate the high-level culinary talents to meet the social needs, to meet people's dietary psychological standards and to satisfy people's pursuit of food's health, color, and taste. This paper briefly illustrates the model of tutoring and apprenticeship and analyzes the demand of the service industry for cooking professionals against the backdrop of current social background. And also the paper points out the advantages that the vocational schools carry out the tutoring mode and put forward the effective strategy of implementing the tutoring model at vocational schools, which can provide some help for the reform of tutoring apprenticeship teaching mode.
