摘要
大葱是我国重要的蔬菜品种之一,长期以来,大葱主要是作为调味蔬菜使用,而对其富含的槲皮素以及保健作用认识欠缺。该文综述了近年来大葱槲皮素的研究进展,包括槲皮素的结构、生物合成、测定方法、分布以及影响因素等。
Welsh onion [Allium fistulosum (L.)var.giganteum Makino] is one of the important vegetables in China. Traditionally, welsh onion was consumed as a seasoning vegetable, while there was a lack of knowledge of the important role of its rich quercetin content on health.This paper reviewed the advances of quercetin research made in recent years, including the structure, bio-synthesis, measurement, distribution, and some factors affecting its accumulation.
