摘要
为了分析比较牦牛乳与犏牛乳脂肪酸组分,试验采用气相色谱法进行脂肪酸成分及其含量测定,通过SPSS软件对测定结果进行分析。结果表明:牦牛乳和犏牛乳均含有42种脂肪酸组分,但含量不同,相对含量较高的脂肪酸是棕榈酸、硬脂酸、顺-9-十八碳烯酸和肉豆蔻酸;牦牛乳组分更接近脂肪酸营养价值的指标;牦牛乳多不饱和脂肪酸和短链脂肪酸均明显高于犏牛乳。两种乳均含有丰富的脂肪酸,但牦牛乳的含量比例更为理想,营养价值相对较高。
To compare and analyze the fatty acids composition of yak and cattle-yak milk,the component and concentration of fatty acids were measured by the gas chromatography method and the data were analyzed and processed by SPSS. The results showed that both two kinds of milk contained 42 fatty acids,but the content was different. The relatively higher content of fatty acids are hexadecanoic acid,octadecanoic acid and9-octadecenoic acid( Z) and myristic acid. The ratio of fatty acids of yak milk is closer to the ideal model. Additionally,the relative content of poly unsaturated fatty acid and short chain fatty acid in yak milk were higher than those in cattle-yak milk. In conclusion,both kinds of milk is rich in fatty acids,but the ratio of fatty acids in yak milk is more ideal and the nutritional value is relatively high.
