摘要
食品物流贯穿于食品从生产至消费的全过程,其信息透明度的提高有助于化解由各利益相关方之间信息不对称所引致的食品安全风险问题。回顾了国内外信息透明度的相关理论并分析了物流环节信息透明度的提高同规避食品安全风险之间的关系。同时,结合食品安全相关文献对食品物流环节应当透明的信息进行了梳理。最后,就研究回顾进行总结,并对未来研究进行了展望。
Food logistics runs through the whole process from production to consumption, improving the information transparency of it could eliminate the gap which exists in participants that could induce the problem of food safety. Review the related theory about the information transparency, and analyze the relationship between improving the information transparency and avoiding the food safety risk. At the same time, summarize the information which should be transparent combining with the related literature. At last, summarize the research and propose the forecast to the future research.
