摘要
酶联免疫吸附法(ELISA)具有方法简捷、检测成本低、分析容量大等优点,适合于复杂基质中的微量成分分析,受到越来越多人的青睐。简单概述了ELISA技术,并从农药残留、兽药残留、违禁添加物、病原微生物和生物毒素以及转基因食品安全性等方面,对该技术在食品安全检测中的应用进行详细的介绍,提出了ELISA技术存在的问题和相应的解决方法,并对该技术进行了展望。
Enzyme-linked immuno sorbent assay (ELISA) is a simple method with advantages of low detection cost and large analysis capacity, etc.. It is suitable for trace analysis of components in complex matrices and it attracts more and more people. Outline the ELISA technology briefly. The application of this technology in food safety testing is introduced detailedly from aspects of pesticide residues, veterinary drug residues, illegal additives, pathogenic microorganisms, biological toxins as well as the safety of genetically modified food and other aspects. Furthermore, mention the technical problems and corresponding solutions of ELISA, and prospect the technology in the future.
