本文通过系统梳理现存天津档案馆的租界档案资料,对晚清至民国时期百余年间奥、意、俄、比、日、法、英、德、美九国在天津租界地内餐饮业的情态与影响做了初步研究。天津租界餐饮业服务了社会需求,对稳定城市经济、促进中西饮食文化交流产生了重要的社会作用与积极的历史影响。可以说天津租界的餐饮业是天津多元文化的重要组成部分,是西方文化与中国传统及地域文化相融合的承载体。
