摘要 本文通过系统梳理现存天津档案馆的租界档案资料,对晚清至民国时期百余年间奥、意、俄、比、日、法、英、德、美九国在天津租界地内餐饮业的情态与影响做了初步研究。天津租界餐饮业服务了社会需求,对稳定城市经济、促进中西饮食文化交流产生了重要的社会作用与积极的历史影响。可以说天津租界的餐饮业是天津多元文化的重要组成部分,是西方文化与中国传统及地域文化相融合的承载体。 This paper studies on the food and beverage industry in Tianjin Leased Territory influenced by the food culture from Austria, Italy, Russia, Belgium, Japan, France, UK, German and USA during Late Qing and Republican Period, based on systematic examination of the archival recordings of Tianjin Leased Territory from Tianjin City Archives.
