摘要
以葡萄皮渣为原料酿制果醋,并以花卉浸提液为主要添加物,生产复合保健果醋饮料。通过单因素实验和正交试验,确定复合保健果醋饮料的最佳配方:花卉浸提液20%,果醋10%,柠檬酸0.2%,蜂蜜15%。按此配方酿制的复合保健果醋饮料营养丰富,风味独特,清朗爽口,酸甜适中。
Taking grape pomace as the raw materval and flower extract as the main additives, the compound health vinegar beverage of edible flowers-wine grape pomace was developed. Through single factor experiments and orthogonal experiments, the best formula for the compound fruit vinegar beverage was consisted of honeysuckle and rose extract of 20%, fruit vinegar of 10% , citric acid of 0.2% and honey of 15%. This compound fruit vinegar beverage was rich in nutrition and has a balanced sweet-and-sour taste.
