林蛙皮胶原蛋白酸法提取工艺及性质研究 被引量:1

摘要 以林蛙皮为原料,研究其胶原蛋白的酸法提取工艺条件,通过单因素试验及Design Expert软件分析预测,根据生产实际优化调整提取胶原蛋白最优工艺条件为:料液比1∶18,盐酸浓度为0.16mol/L,浸提时间为5h,胶原蛋白提取最大量为28.20%。同时,对林蛙皮胶原蛋白产品进行傅立叶红外转换扫描图谱显示,通过酸法提取的胶原蛋白保存有比较完整的螺旋结构。DSC差热扫描得到酸溶胶原的变性温度为52.4℃,高于猪皮和牛皮胶原的变性温度37℃。 This thesis is to extract collagen from the remaining Rana chensinensis skin, and to study the collagen by acid extraction and enzymatic extraction process. Through analyzing and forecasting by the single-factor test and De- sign Expert software, according to the actual , the optimum process condition of products are: solid-liquid ratio 1 : 18, hydrochloric acid concentration of 0.16tool/L, extraction time of 5h , the maximum amount of collagen extraction was 28.2 %. Fourier transformation infrared scan patterns showed that acid extraction of the products, the experiments proved the system to take the acid-soluble collagen is the preservation of the original spiral structure completely. DSC scanning results showed that the acid-soluble collagen of original protein denaturation temperature is 52.4℃ ,which is more than the skin and cowhide collagen denaturation temperature of 37℃.
