果渣作功能性食品辅料和绿色包材原料的增值利用 被引量:6

Value-added Utilizations of Fruit and Wine Grape Pomace as Functional Food Ingredients and Bulk Materials for Creating Green Packaging-A Review

摘要 果汁加工和葡萄酒酿造产生大量的副产物,统称为"果渣"。果渣中含有许多生物活性物质,例如大量的酚类物质和膳食纤维、少量的蛋白质与矿物质、脂肪酸、有机酸、糖类及其它物质。因直接将果渣排泄或掩埋会带来潜在的环境问题,故果渣的处理一直是行业难题。通过增值加工与综合利用,将果渣作为功能性成分添加至食品产品中,既可使食品具有保健功效,也可改善产品物性结构,延长产品货架期。同时,果渣中大量的纤维素可以作为绿色包装材料(可降解或可堆肥)的主要原料。果渣废料经过增值利用后可以变废为宝,展现出重要的商业价值。本文针对不同果渣中的生物活性物质,以及果渣在功能性食品和绿色包装材料中的增值应用进行综述。 Juice processing arid winemaking result in significant amount of bio-residuals, named "pomace'. Fruit and wine grape pomace contain a large amount of bioactive compounds including phenolics, dietary fibers, smaller amounts of proteins and minerals, and some remaining juices with acids, sugars, and other soluble substancesi'DisiSbsal of pinnace has been a burden for the industry since the direct disposal of pomace into soil or landfills can pose po^dntial environ- mental problem, thus is inhibited. Fruit and wine grape pomace may be utilized for various value-added applications, including as functional food ingredients in a wide range of food products h^r promoting human health, modifying and/or improving structural and physical properties, and extending product shelf-life. Pomace can also be utilized as source of fibers to cI^ate green (biodegradable or compostable) packaging materials. Through technology innovation, the tons of waste product from being a burden can be transformed to becoming a valuable source of revenue for the juice and wine companies. This review reported"important bioactive compounds in various fruit and wine grape pomade, and research and development of pomace as functional food ingredients and bulk materials for developing edible and biodegradable packag- ing materials.
