摘要
试验研究了白斑狗鱼在4℃,10℃冷藏微生物、化学和感官品质的变化,利用修正的Gompertz方程描述微生物生长情况,结合挥发性盐基氮(TVBN)、p H和感官品质指标确定白斑狗鱼的货架期。研究结果表明,4℃,10℃冷藏白斑狗鱼的货架期分别为240,96 h,货架期终点菌落总数分别为6.878,6.978 log CFU/g,TVBN分别为28.28,27.16 mg/100 g,p H分别为9.11,9.19。预测4℃,10℃冷藏白斑狗鱼的货架期,预测值和实测值相对误差为-2.083%~13.54%,结果表明修正的Gompertz方程可以快速预测冷藏白斑狗鱼的货架期。
Microbiological, chemical and organoleptic quality changes of Esox lucius stored aerobically at 4 %, 10 ℃ were mainly studied. The microorganism growth of Esox lucius was described by the modified Gompertz equation. The shelf life was calculated by using TVBN, pH and organoleptic. The results showed that the shelf life of Esox lucius was 240 or 96 h; Aerobic plate count (APC) was 6.878 or 6.978 log CFU/g; TVBN was 28.28 g or 27.16 mg/100 g; pH was 9.11 or 9.19 at 4 ℃ or 10 ℃, respectively. The shelf life of Esox lucius at 4 ℃ or 10 ℃ was predicted by the shelf life model. Basic errors between predicted shelf life and observed shelf life were -2.083%-13.54%. The results indicated that the modified Gompertz model was valuable for predicting the shelf life of chilled Esox lucius.
