摘要 依据国家食品标准对云南野生黄毛草莓鲜果中氨基酸、矿物质元素、总糖、总酸等成分进行了较全面的检测,并对其营养价值进行了评价。结果表明:鲜果中除含总糖、总酸、蛋白质等营养物质外,富含17种氨基酸(其中谷氨酸的含量高达2.16 g/kg)和9种人体需要的矿物质元素(其中钾的含量高达160 mg/kg)。黄毛草莓是一种集医疗、食用,具有优良遗传基因的物种,又是一种无污染、纯天然的食品,具有极大的开发潜力。 According to national food standards, compositions of Yunnan Fragaria nilgerrensis Schlecht fresh fruit, such as amino acids, mineral elements, total sugar, total acid were comprehensively tested, and its nutritional value was evaluated. The results show that the fresh fruits contain total sugar, total acid, protein and other nutrients, as well as 17 kinds of amino acids(the content of glutamic acid is as high as 2.16 g/kg)and 9 kinds of mineral elements which human bodies need(among them the content of potassium is as high as 160 mg/kg). Fragaria nilgerrensis Schlecht is a collection of medical, edible value with excellent genetic species, and is also a kind of pollution-free and purely natural food, which has a great development potential.
