云南烟叶感官甜度分类分析及代表样品建立

摘要 为了指导卷烟配方、原料采购、新产品开发,通过对云南8个代表性产区,24个烟叶样品进行感官评吸评价,探索云南烟叶的感官甜度分类,并建立相关联的原烟外观代表样品。结果表明:在5%的显著水平下,基于Friedman检验,评价员区分出了5类代表样品的差异性。基于Page检验,评价员辨别出了5类代表样品之间的排序差异,达到了稳定一致,说明可将云南烟叶甜度划分为5个档次,并通过排序分析,建立了云南烟叶甜度的代表样品。 In order to guide the cigarette formula,raw material procurement,new product development,the sensory evaluation of 24 flue-cured tobacco samples in eight representative production areas of Yunnan were made,the sensory sweetness of Yunnan tobacco was classified,and the associated appearance representative samples of crude flue-cured tobacco were established.The results showed that the evaluators distinguished the differences of five types of representative samples based on the Friedman test under the significant level of 5%.Based on the page test,the evaluators identified the rank differences among the five sample categories which reached a stable consensus,so the sweetness of Yunnan flue-cured tobacco could be divided into five grades.The representative sweetness samples of Yunnan tobacco leaf were established by sequence analysis.
