工艺环境介质氛围对初烤烟叶化学特性的影响研究

摘要 【目的】为优化烟叶调制工艺、提高烟叶品质。【方法】进行无氧介质环境气体氛围条件调制烟叶试验。【结果】(1)与正常调制方式相比,经无氧介质环境气体氛围调制,烟草有机常规化学成分增加,无机常规化学成分基本保持不变;(2)烟草多酚类物质增加,烟草挥发性致香成分含量增加13.74%,其中β-大马酮增加了52.41%、巨豆三烯酮增加了46.49%;(3)无氧介质环境气体氛围调制减缓了类胡萝卜素成分的降解,其中叶黄素含量增加了62.91%,β-胡萝卜素含量增加了43.40%。【结论】无氧介质环境气体氛围调制可降低影响烟叶内在品质的化学成分的损失。 [ Purpose] The objective of this study was to optimize tobacco leaves modulation technol- ogy and improve tobacco quality. [ Method] The modulation test of tobacco leaves under anaerobic medium condition was used. [ Result] (1) Compared with normal modulation method, the change of inorganic conventional chemical content of tobacco leaves was not obvious while the organic con- ventional chemical content is increase. (2) The content of polyphenols increased, and the volatile aroma components increased by 13.74% totally, in which β-damascenon and megastigmatrienone in- creased by 52.41% and 46.49% , respectively. (3) Modulated under anaerobic medium atmos- phere could slow the decompose process of carotenoid constituent, and the content of lutein and β- carotene increased by 62.91% and 43.40% respectively. [ Conclusion] Anaerobic medium atmos- phere modulation method could reduce the loss of chemical composition which affects on the tobacco internal quality.
