摘要
鸡骨架是鸡肉加工过程中的副产品,含丰富的营养素,其中蛋白质和脂肪含量与肉类相似,并且矿物质含量较高。随着肉鸡养殖业的发展,我国鸡骨产量增长迅速,鸡骨加工的调味料发展势头良好,但我国骨类调味料无论在基础研究、设备研发还是新技术应用等方面与发达国家相比都存在较大差距。从鸡骨架的营养特性、资源概况、开发现状、鸡骨肉加工产品等几个方面进行了分析,鸡骨架的营养极为丰富。随着食品行业的发展,骨类调味料的开发具有广阔的前景。
Chicken skeleton was a by - product in the processing of chicken, and it contained rich nutrient materials. The content of protein and fat was similar to meat and the content of mineral was high- er. With the development of broilers breeding industry, the production growth of chicken bone in our country was rapid, and development momentum of seasonings made with chicken skeleton was good. But our country bone class seasonings still existed a great distance compared with the developed country, whether in basic research, equipment development research, new technique application and other as- pects. Several aspects of chicken skeleton including nutrition characteristics, resources survey, develop- ment status and chicken bone meat processing products were analyzed. The nutrition of chicken skeleton was extremely rich. With the development of food industry, exploitation of bone class seasonings had broad prospects.
