摘要
以豆渣抗氧化提取物为主,与茶多酚、维生素C等天然抗氧化剂进行复配,研究新型复合抗氧化剂的配方。利用Box-Behnken试验设计并结合响应面分析法,以豆渣抗氧化提取物、茶多酚和维生素C添加量为试验因素,采用Schaal烘箱法,以油脂的诱导期为响应值,进行二次回归设计建立模型,得到最佳抗氧化剂组合为豆渣提取物0.57%、茶多酚0.05%和维生素C 0.02%,此时油脂的诱导时间为11.22 d,抗氧化效果最佳。
A new compound antioxidant formula was conducted using mainly antioxidant extract of bean dregs supplemented by natural antioxidants including tea polyphenol and vitamin C. Using Box-Behnken test design and response surface methodology, the antioxidant extract of bean dregs, tea polyphenol and vitamin C were used as experimental factors. While using Schaal oven method, the induction period of oil was adopted as response value. Secondary regression design was conducted to build a model of best antioxidant combination which was, 0.57% of soybean dregs extract, 0.05% of tea polyphenol and 0.02% of vitamin C. At such combination, the induction time ofoil was 11.22 d, and the anti oxidation effect was best.
