摘要
骨骼肌由不同类型的肌纤维组成,根据肌纤维肌球蛋白重链的不同,将肌纤维分为Ⅰ、Ⅱa、Ⅱx和Ⅱb型。骨骼肌中肌纤维类型的组成可影响屠宰后肉质,而肌纤维类型的转化则受体内多种信号通路和调控因子的调节以及饲粮营养因素的调控。本文对肌纤维转化的分子信号通路及其营养调控进行初步总结,为今后研究通过营养策略调控肉品质提供参考。
Skeletal muscle is made up of different types of muscle fibers which characterized by the myosin heavy chain isoform composition and consists of up to four main types : Ⅰ , Ⅱ a, Ⅱ x and Ⅱ b. The composition of muscle fiber type in skeletal muscle influences the meat quality after animal slaughter. The skeletal muscle fiber type transformation can be regulated by different signaling pathways and regulatory factors in vivo and also by nutritional factors in diet. This review summarized the underlying signaling pathways and certain nutritional factors, for reference in understanding of improving meat quality through nutritional intervention.
