不同贮藏温度对新疆热风干制杏干贮期品质的影响 被引量:5

摘要 以新疆热风干燥杏干(赛买提)为试材,在自然温度及5℃条件下贮藏180 d,比较杏干的含水量、还原糖含量、总酸含量、维生素C含量的变化,研究不同的贮藏温度对其贮期品质的影响。结果表明,新疆热风干制杏干的含水量、还原糖含量、总酸含量、维生素C含量总体呈下降趋势;随着贮藏时间的延长,常温贮藏的新疆热风干制杏干的品质在逐渐变劣,使其货架期变短,而低温(5℃)贮藏温度能较好地维持新疆热风干制杏干的贮期品质。 This paper took dried apricot(saimaiti) as test materials, and the dried apricot were stored separately at natural temperature and 5 ℃ for 180 d, the changes of moisture content, reducing sugar content, total acid content, vitamin C content were compared, the effect of different storage temperature on the shelf live quality was studied. The results showed that moisture content, reducing sugar content, total acid content, vitamin C content of Xinjiang dried apricot generally had a downward trend. With the extention of storage time, the quality of dried apricot at natural temperature were gradually deteriorated,its shelf life was shorter. Stored at 5 ℃ was better to prolong the shelf of dried apricot and achieve better sealed storage.
