不同密集烘烤工艺对高温逼熟烟叶烤后质量的影响 被引量:5

摘要 研究不同工艺对烘烤过程中高温逼熟烟叶含碳和含氮化合物的变化及烤后烟叶化学成分的影响,以期为高温逼熟烟叶密集烘烤工艺优化提供理论依据。以广东烟区高温环境条件下成熟上部烟叶为材料,明确不同工艺对烘烤过程中烟叶含碳和含氮化合物的变化,以及烤后烟叶化学成分的影响。结果显示,在密集烘烤变黄和定色阶段拉长烘烤时间和提高湿球温度,烟叶淀粉和可溶性蛋白降解量提高,还原糖和总游离氨基酸积累增加,烤后烟叶质量改善。研究认为,在南方三段式烘烤工艺变黄和定色阶段稳温时间基础上分别拉长10,14 h,并提高湿球温度0.5℃能提高高温逼熟烟叶质量。 The changes of sugar and nitrogen compounds and the quality of flue-cured tobacco of the upper leaves after high temperature forced ripening were studied in order to provide a theoretical basis for optimization and perfection of curing technology. The experiment studied the changes of sugar and nitrogen compounds and the quality of flue-cured tobacco of the upper leaves in addition to the danger of high temperature in Guangdong producing areas. The result showed that the content of starch and protein declined more rapidly while the content of reducing stage total free amino acids increased by prolonging the time and increasing humidity during the yellowing and fixing stage. It concluded that the chemical components would improve the quality of flue-cured tobacco leaves by respectively prolonging 10, 14 h during the yellowing and fixing stage, simultaneously increasing 0.5 ℃ of humidity based on three stage techniques.
