摘要 葡萄酒是利用新鲜的葡萄或葡萄汁经发酵所得的含酒精饮料,而甲醇作为一种在其酿制过程中会产生的化学物质,对人体的危害极大。国标GB/T 15038—2006中规定了两种测定葡萄酒中甲醇的方法:品红-亚硫酸化学比色法和气相色谱法。以气相色谱法为研究对象,针对国标气相色谱法存在检测过程比较繁琐、耗时长、甲醇易挥发等缺点,探究了当前利用气相色谱法测定葡萄酒中甲醇含量的几种改进方法,为相关部门完善国标方法提供了改进方向。 Grape wine is an alcoholic drink fermented by fresh grape/grape juice. Methanol, as an inevitable product in the process of wine brewing, is extremely harmful to human health. There are two determination methods for methanol in grape wine in national standard GB/T 15038--2006 including chemical colorimetry of Schiff reagent and gas chromatography. GC has the disadvantages including cumbersome operation, time-consuming and easy evaporation of methanol, etc. In this study, several improved GC methods were introduced, which provided useful reference for perfecting the national standard.
