摘要
从葡萄酒酿造实训室的管理、生产设备的使用要求及葡萄酒工艺流程的控制性管理等方面,探讨葡萄酒酿造前发酵阶段的规范性管理。为更好地发挥葡萄酒酿造实训室理实一体化的学习优势,实现学生毕业后从学校到就业的零过渡,有着极其重要的作用。
In this paper, the standardized management of primary fermentation stage of wine-making was discussed from the aspects including the management of wine-making training room, the application requirements of wine-making equipment and the control management of wine-making procedures. The standardized management could give full play to the advantages of learning and practice in wine-making training room and it plays an important role in the transition of students from school to employment after graduation.
