摘要 腌酸菜是东北人贮藏冬菜的一种传统方式。以东北家庭腌制酸菜为例,对传统方法和塑料瓶法腌制酸菜的工艺进行讨论比较,以便人们吃到营养健康的酸菜。 Pickled cabbage is a traditional way of cabbage storage in northeast China. In this paper, the traditional method of pickled cabbage and plastic bottle of pickled cabbage were discussed. The results can provide some advice for people to choose the pickled cabbage with the better nutritional value.
