摘要 目的评价驻山东地区部队膳食营养状况,并观察不同兵种在膳食供给方面是否存在政策性差异,为制定合理的膳食营养供给提供科学依据。方法选择驻山东地区同一城市的两个不同兵种单位,每个单位选择2个营级伙食单位,共644人,以记帐法进行膳食调查,调查周期为一个月。结果被调查两个兵种单位能量及大部分营养素摄入供给量充足,但存在食物品种构成较单一、三大营养素构成比例不合适、部分维生素和矿物质缺乏较明显等问题。结论各单位膳食营养供给存在需要改进之处,炊管人员在食物种类的选择上缺乏科学性指导,建议对其进行基本的营养学知识培训。 Objective To evaluate the dietary nutrition status of troops in Shandong Province, and to find out about the difference in guidelines for nutrition between different service units. Methods An accounting method was adopted for one month during the survey, involving a total of 644 soldiers from four battalions of two different service units in the same city in Shandong province. Results The results of the dietary survey generally suggested that the supplement of energy and most of the nutrients were adequate, except for the lack of variety of foods, the inappropriate ratio of protein to fat and carbohydrates, and the signifi- cant deficiency of specific vitamins and minerals. Conclusion Dietary nutrition needs to be improved in military units, as a lack of knowledge of dietary nutrition was observed among the kitchen staff. Basic training on nutritions is recommended.
